Welcome to my second post! Now, I’m always seeing “what I eat in a day” blog posts and youtube videos, and I know a lot of people are intrigued into what other people are eating, their meal plans, and mainly just being right-out nosey.
Just like me.
So to satisfy all you curious-minded people on what I tend to eat in a day, below is a few meals I love…
BREAKFAST: AT HOME ACAI BOWL
2 handfuls of strawberries
3 handfuls of blueberries
Step 1 – simply add 2 bananas, a handful of strawberries, 2 handfuls of blueberries, a handful of spinach, 3 tablespoons of yoghurt and a dash of water into a blending machine.
Step 2 – once fully blended, pour into a bowl and put in the freezer to set for 5 mins.
Step 3 – while waiting for smoothie to set, chop up the resting fruit into bite size pieces.
Step 4 – after 5 mins take smoothie out of freezer and add chopped fruit on-top, adding some yoghurt and granola. Voila!
LUNCH: FALAFEL SALAD PITTA
dressing of your choice
Step 1 – make a boiled egg, and slice into pieces. Also chop the pepper, cucumber and falafel.
Step 2 – simply add all ingredients onto pitta-bread and add a dressing of your choice!
DINNER – SWEET POTATO, SPINACH & CHICK-PEA CURRY
1/2 can chick-peas
2 mini sweet-potatoes
Step 1 – drain chick-peas from can, rinse clean & remove any discoloured peas. Place in a bowl and cover chick-peas with cold water. Leave to soften for approx. 1o mins.
Step 2 – chop up sweet potatoes into bite size chunks, and place in a frying pan with a dash of olive oil and set to a high-cook.
Step 3 – while the sweet-potato cooks, chop up peppers and spinach. Once the sweet potato has starting to turn a golden brown colour, add; chick-peas (once drained out of water), spinach, peppers and add a dash of water.
Step 4 – cook all ingredients for approx. 20 mins, add a dash of garlic & pepper and frequently adding dashes of water.
Step 5 – once all ingredients start to turn brown and chick-peas and sweet potato have softened, add curry sauce.
Step 6 – simmer pan for 20 mins for sauce to thicken
Step 7 – boil/make rice, set on a plate and pour over curry. Ta-daaaa!
